These delicious little rolls are inspired by the Indian samosas. This inspiration came from my friend Sofia.
An exact recipe is not really needed – I think that you can manage nicely with your own version. I choose to use pastry leaves (Yufka-Jufka from ömür – a Turkish product) for a healthier version than the original samosas, but you can also use filo dough. I also baked the rolls in the oven (at 375 degrees) instead of frying on a pan, which makes them easier to prepare and a lot healthier.
To make the stuffing, I first boiled and mashed potatoes and carrots, and then sautéed onions and garlic. After mixing these items together, I spiced the stuffing with chili powder, curry, turmeric, cumin, salt and pepper, and added a little bit of milk and butter. After rolling each one, I lightly brushed them with a beaten egg to give each roll a beautiful color during the cooking process.
