GERDA’S AMERICAN DATE CAKE

date cakeWhen I was growing up in Denmark, I didn’t have much extended family nearby. As a result, I considered my parents’ Danish friends as family.  One example is Gerda and Herluf, my unofficial grandparents, and two of the most kind and genuine people I know. Our family has always been welcomed to their annual Christmas party, which includes their whole family – children, grandchildren, and great-grandchildren. It’s a great Danish party, with a great family that lives life to the fullest.

The following is Gerda’s American Date Cake, which she made for one of the Christmas parties before passing the recipe on to me. I found it hidden among my pile of recipes and finally made it.

INGREDIENTS

  • 10 oz. (300 grams) dates, stones removed and divide in quarters
  • 1.75 oz. (50 grams) almonds (skin removed), roughly chopped
  • 7 oz. (200 grams) sugar
  • ½ teaspoon vanilla extract/vanilla sugar
  • 1.25 oz. (35 grams) butter
  •  1 ¼ cups (300 ml) boiling hot water
  • 2 eggs
  • 7 oz. (200 grams) whole-wheat flour
  • 7 oz. (200 grams) all-purpose-flour
  • 2 teaspoons baking soda

TOOLS:

  • 1 ½ quarts (1 ½ liter) bread pan

DIRECTIONS:

  1. Preheat the oven to 3500F (1750C) on convection bake.
  2. In a big bowl, mix dates, almonds, sugar, vanilla extract and butter, and pour boiling water over the mixture. Let stand until it has cooled off.
  3. Whip eggs lightly and stir into the mix.
  4. Stir in flour and baking soda.
  5. Grease a bread/cake pan and pour in the cake mix.
  6. Bake in the oven for about 1 hour.
  7. Serve a slice of date cake preferably with a bit of butter.
